Double Chocolate Grain Free Protein Pancakes

For the Pancakes

  • 1/4 cup (70g) cauliflower puree
  • 2 large eggs
  • 2 tbsp (14g) raw cacao powder
  • 1 tbsp (7g) coconut flour
  • 2 tbsp (15g) Pulsin' whey protein isolate
  • 1/4 tsp vanilla powder or extract (not essence)
  • 1 tbsp stevia, or 1/2 tbsp (10g) raw honey
  • 1/2 tsp baking powder

For the Sauce

  • 1 tbsp (14g) hazelnut butter
  • 2 tbsp (14g) raw cacao powder
  • 1/4 cup (60ml) unsweetened almond milk
  • 1 tsp raw honey or 2 tsp stevia
  • 1/4 tsp vanilla powder or extract (not essence)

Perfectly light but a delicious mix of a fudge and brownie texture and made indulgent thanks to a generous amount of the chocolate hazelnut sauce spread between the layers!

They also contain an extra boost of protein from our Whey Isolate, they don’t taste at all “healthy”, yet their virtuous macro’s are sure to fill you up and unlikely to leave you blotted or sluggish.

Instructions

  1. Blend together batter ingredients using a hand blender
  2. Melt coconut oil in a pan over a medium heat
  3. Spoon two tbsp of the batter per pancake in to the pan. You can cook 3 together and then the final 2; just depends on the size of your pan!
  4. Allow to cook for 3 minutes before gently flipping and cooking for 2 minutes more!
  5. Repeat with remaining batter
  6. Blend together sauce ingredients, place in pot and gently heat through while your pancakes cook
  7. Serve pancakes with sauce sandwiched between and poured over the top…garnish with cacao nibs and fresh raspberries if desired!
