Chewy Coconut Goji Berry Beet Protein Bars

Ingredients

  • 2 cups (160g) fine grain desiccated coconut
  • 1/4 cup (60g) coconut butter melted
  • 1/4 cup (60g) cacao butter melted
  • 2 tbsp freeze dried strawberries blitzed to a powder
  • 1/4 cup (80g) honey
  • 60g (1/4 cup) 90 – 100% dark chocolate melted for topping

  • 4 scoops (120g) whey protein concentrate
  • 1/3 cup (80g) coconut oil melted
  • 1 tbsp beet powder
  • 1/2 tsp vanilla powder or fresh vanilla seeds
  • 1/4 cup (30g) Goji Berries
  • Freeze dried rose petal for decoration (optional)

This week we have an alternative protein bar! Bright pink, chewy, and deliciously topped with dark chocolate and fragrant rose petals.

The texture is incredibly light, coconut bound with cacao butter, coconut oil and coconut butter. These bars are also chewy, crispy round the edges and incredibly satisfying. They include our whey protein concentrate so you can be sure you are getting plenty of protein mixed with the rich dark chocolate and tart goji berry flavours.

Instructions

  1. Mix together cacao butter, coconut butter, honey and coconut oil
  2. Mix together vanilla, strawberry powder, beet powder, desiccated coconut and protein powder
  3. Add wet melted ingredients to the dry and stir well to combine
  4. Stir in goji berries
  5. Press mixture in an 8 x 8 or 9 x 4-inch tray. Place in the fridge to set overnight or the freezer for a couple of hours. Remove and slice into 9 – 12 bars
  6. Drizzle or spoon and spread the melted dark chocolate on top…or both! Sprinkle with freeze dried rose petals if using
  7. Store in the fridge for up to two weeks in a seal tight container or freezer for up to one month
